Exosmosis is the process of movement of water molecules from inside to the outside of the cell, where the solution is hypertonic due to the presence of salt and thus by adding salt to the vegetables it releases water.The same principle is used in pickling, where the mangoes (or any other fruit) are soaked in a hypertonic solution of salt.
Then the mangoes will ooze out water and the cell becomes flaccid. This process is called as an exosmosis.
